The Wonder of Winter Spinach

I remember planting spinach in the fall to overwinter under mulch, inside a cold frame in my Massachusetts garden. That was many years ago. 

Now I garden in Southern California and grow spinach easily in the winter months. It’s been tested to 25 degrees on occasion here but I worry more about unseasonably warm weather causing the spinach to bolt.

Even if you don’t winter over a planting of spinach, you might want to try her method of priming spinach seeds to improve germination.
