The Carrot Harvest

These little gems were a delightful surprise as I pulled the last of the carrots. They were slower to come to size than the Nantes carrots. It was time to make way for the summer garden.

Though they’re baby carrot size, I’ve had fun adding them to salads.

These chunky Nantes carrots and some forked ones are destined for a carrot soup. I’ll reserve a few for lunches and a salad.

Moosewood’s Carrot-Yogurt Salad comes to mind. I think grated white and orange carrots would be colorful and perhaps with some fresh blueberries to keep up the tricolor theme. Check the recipe for other flavorful additions.

Isn’t it amazing that such beautiful and sturdy vegetables grow from such a tiny seed?
