Harvest Monday: Beets to Go

‘Baby Ball’ and 'Golden’ beets  I’ve been pulling them regularly to share with family, friends and co-workers. They pair nicely with a handful of sweet peas.

Bountiful is the word for this year’s crop. Last year, germination was poor, likely because I planted seeds too late. This year I’m enjoying the opportunity to share the harvest. 

Last night I needed a carrot for the bean soup. I walked to the garden, pulled a carrot and deposited the tops in the compost bin. As I walked toward the house, Nantes carrot comfortably in hand. I paused on the patio to capture the moment and let the thankfulness I was feeling settle in.
