Asian Cabbage Slaw

In a large bowl, combine 2 tablespoons fresh lime juice, 2 tablespoons rice vinegar, 1 tablespoon olive oil and ½ teaspoon sugar; season with salt and fresh ground pepper and whisk. To dressing, add ½ small head shredded cabbage, ½ cup fresh cilantro leaves, 2 scallions cut on the diagonal, very thinly. Optional ingredients 1 grated carrot and ½ fresh jalapeno, minced.
