Vegetables That Grow in Less Than 2 Months

Growing food for self sufficiency and resilience is especially relevant in times like these when the systems that we rely on for sustenance are under stress. These are veggies that can easily be grown from seed in less than 60 days and even as fast as 25! You don’t need a backyard to grow food— a balcony, porch, or sunny area inside will suffice! And here are those vegetables I’ve grown in my garden.

The above crops are traditionally grown in the cool season garden where winters are mild—much of California and the Southwest. You may still be able to plant some of these, especially in coastal areas or where there is part shade. Timing is perfect for regions where spring gardens are just being planted now.

And I definitely agree that a sunny porch or balcony can grow a garden. Here’s arugula growing in a 12-inch terra cotta container in my garden. I grow it year-round this way.
